Ingredients:
- 1 medium head of cabbage (about 2 pounds), shredded
- 2 tablespoons butter or vegetable oil
- 1 medium onion, finely chopped
- 1/4 cup apple cider vinegar
- 2–3 tablespoons sugar (adjust to taste)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon smoked paprika (optional, for a smoky flavor)
- 1/2 cup water or vegetable broth
- 1/4 cup raisins (optional, for added sweetness)
- Chopped parsley (for garnish, optional)
Instructions:
Prepare the Cabbage
- Remove any damaged outer leaves from the cabbage. Cut it in half, remove the core, and shred the cabbage finely using a knife, mandoline, or food processor.
Sauté the Onion
- Heat the butter or oil in a large skillet or heavy-bottomed pot over medium heat.
- Add the chopped onion and sauté for 3–5 minutes until translucent and lightly golden.
Add the Cabbage
- Add the shredded cabbage to the skillet, stirring to combine with the onions. Cook for 5–7 minutes, stirring occasionally, until the cabbage starts to soften.
Make It Sweet and Sour
- In a small bowl, mix the apple cider vinegar, sugar, salt, pepper, and smoked paprika (if using). Adjust sugar and vinegar to balance the sweetness and tanginess to your liking.
Simmer the Cabbage
- Pour the vinegar mixture over the cabbage. Add the water or vegetable broth and stir well.
- If using raisins, stir them in at this point.
- Reduce the heat to low, cover, and simmer for 15–20 minutes, stirring occasionally. The cabbage should be tender, and the flavors well combined.
Adjust and Serve
- Taste the cabbage and adjust the seasoning, adding more sugar or vinegar if needed.
- Garnish with chopped parsley, if desired, and serve warm.
Serving Suggestions:
- Serve as a side dish with roasted meats, sausages, or tofu.
- Pair with mashed potatoes, rice, or crusty bread for a hearty meal.
- Enjoy it cold as a topping for sandwiches or wraps.
This sweet-and-sour cabbage is versatile, healthy, and bursting with flavor!
