- Coriander Powder: 1 teaspoon
- Garam Masala: 1 teaspoon
- Salt: To taste
- Oil or Ghee: 3 tablespoons

- Water: 4 cups
Instructions:
Preparation:
- Rinse and Soak the Rice:
- Rinse the basmati rice under cold water until the water runs clear.
- Soak the rice in water for about 30 minutes, then drain.
Cooking the Polao:
Heat Oil or Ghee:
- In a large, heavy-bottomed pot, heat 3 tablespoons of oil or ghee over medium heat.
- Add the cumin seeds, bay leaves, cardamom pods, cloves, and cinnamon stick. Sauté for a minute until fragrant.
Cook the Onions:
- Add the thinly sliced onions to the pot and sauté until they turn golden brown.
Add Ginger-Garlic Paste:
- Add the ginger-garlic paste and slit green chilies. Sauté for 2-3 minutes until the raw smell disappears.
Add the Tomatoes and Spices:
- Add the chopped tomatoes to the pot and cook until they soften.
- Add 1/2 teaspoon of turmeric powder, 1 teaspoon of red chili powder, and salt to taste. Mix well and cook for another 2-3 minutes.
Add the Vegetables:
- Add the chopped mixed vegetables to the pot. Sauté for 5-7 minutes until they are slightly tender.
Add the Rice:
- Add the drained basmati rice to the pot. Gently mix to combine the rice with the vegetables and spices, ensuring the rice is well-coated with the flavors.
Add Water:
- Pour in 4 cups of water and bring to a boil. Taste the water for seasoning and adjust salt if needed.
Cook the Rice:
- Reduce the heat to low, cover the pot with a tight-fitting lid, and let it cook for about 15-20 minutes. Do not lift the lid while the rice is cooking to allow the steam to build up and cook the rice evenly.
Rest and Fluff:
- Once the rice is cooked and all the water is absorbed, turn off the heat and let the pot sit covered for another 5-10 minutes.
- Remove the lid and gently fluff the rice with a fork.
Finishing Touches:
- Garnish:
- Garnish with freshly chopped coriander leaves before serving.
Serving Suggestions:
- With Raita: Serve vegetable polao with a side of cool cucumber raita or boondi raita.
- With Pickles: Accompany the polao with your favorite Indian pickles for an extra burst of flavor.
