Ingredients:

  • Tomatoes: 4 medium-sized, finely chopped
  • Dates (Khajoor): 10-12, pitted and chopped

  • Garlic: 2-3 cloves, minced
  • Green Chilies: 2, finely chopped
  • Cumin Seeds: 1 teaspoon
  • Mustard Seeds: 1 teaspoon
  • Fenugreek Seeds: 1/2 teaspoon
  • Asafoetida (Hing): A pinch
  • Turmeric Powder: 1/2 teaspoon
  • Red Chili Powder: 1 teaspoon
  • Salt: To taste
  • Sugar: 2 tablespoons (adjust to taste)
  • Tamarind Paste: 1 tablespoon (optional)
  • Oil: 2 tablespoons
  • Water: 1 cup

Instructions:

  1. Prepare the Ingredients:

    • Wash and finely chop the tomatoes and dates.
    • Grate the ginger and mince the garlic.
    • Chop the green chilies finely.
  2. Heat the Oil:

    • In a medium pan, heat 2 tablespoons of oil over medium heat.
    • Once the oil is hot, add 1 teaspoon each of cumin seeds and mustard seeds.
    • Add 1/2 teaspoon of fenugreek seeds and a pinch of asafoetida. Sauté for a few seconds until the seeds start to splutter.

    • Add the chopped tomatoes and cook until they soften, stirring occasionally.

    • Add the chopped dates to the softened tomatoes. Stir well.
    • Add 1/2 teaspoon of turmeric powder, 1 teaspoon of red chili powder, and salt to taste. Mix thoroughly.
  5. Simmer the Chutney:

    • Add 2 tablespoons of sugar and 1 tablespoon of tamarind paste (if using) to the mixture.
    • Pour in 1 cup of water and bring to a boil.
    • Reduce the heat and let it simmer for about 20-25 minutes, stirring occasionally, until the chutney thickens.
